Celia Roldan moved to Baja California Sur from Mexico City to the desert in 2017 and started a community kitchen under a tree. Working together with Alianza para la Seguridad Alimentaria de Baja California Sur and its donors, she now feeds a hundred children a week. She has created her own Oasis of hope on the outskirts of Cabo San Lucas.
“This journey taught me the strength of community and the power of resilience. Food brings people together. Sometimes I'm here on a Friday and I think I'll be alone, I'll cook this and that and then the children see me and soon we’ve gathered all the tables and we're all eating, talking, and joking around. The ladies come to have coffee. That's what food does, it brings people together, it facilitates conversation.”
